Matcha

Matcha

Finely powdered tea with a strong umami flavor, popular Matcha is made from young, shade-grown tea leaves. Steaming the leaves and grinding them in a stone mill produces an elegant, delicately sweet tea.

Respecting the Leaf

How Matcha Is Produced

  • 01 Matcha Grows on a Tea Plantation in Japan

Matcha leaves are carefully grown in the shade, away from direct sunlight. This stimulates increased chlorophyll and results in bright green leaves.

  • 02 Matcha Is Harvested in the Spring

The finest Matcha leaves are handpicked.

  • 03 Once Harvested, Matcha Leaves Are Steamed, Not Roasted

This is the step that differentiates Japanese green tea from others. Steaming leaves for 15 to 20 seconds within 12 to20 hours after harvest prevents the oxidation process.

  • 04 Steamed Leaves Are Laid Out to Dry and Then Ground Into Powder

Dried Matcha leaves, called Tencha, are ground in a stone mill to produce the bright green powder we recognize.

Did You Know? You can often discern Matcha’s quality by its color: higher-grade Matcha is luminescent emerald green.
